[p=21, 2, left]The reason they are so costly is because they come from a group of only 50 black Iberian pigs personally selected and [b]reared[/b] by a [b]third-generation[/b] Iberian pig farmer and curer.[/p][p=21, 2, left]Each pig has been fed on a special diet of [b]acorns[/b] and roots to give the ham its distinctive flavour, and given a [b]pasture[/b] of ten [b]hectares [/b]each to live in.[/p][p=21, 2, left]After, what is by pig standards, an [b]idyllic life[/b] of [b]roaming [/b][b]oak groves[/b] and feeding naturally, the pigs are [b]slaughtered[/b] and the curing process begins.[/p][p=21, 2, left]To make jamon iberico, as it is called in Spanish, the hams are salted and left to dry for two weeks, then they are [b]rinsed[/b] and dried for another four to six weeks.[/p][p=21, 2, left]The dry hams are then hung in a cool, dry place for between 12 and 36 months before being made available to the public.[/p][p=21, 2, left]These kinds of ham are served [b]raw[/b] in very thin slices and usually eaten as an appetiser.
