delicious巧克力菜谱

  1、Mole Negro with Turkey 摩儿酱火鸡
  Mole Negro (pronounced moh-lay neg-row) is a very complex sauce that includes more than 20 ingredients like fried bananas, dried bread, various nuts and chili peppers, and of course, chocolate. This is a simplified version:
  摩儿酱(Mole Negro)是一种很复杂的酱,包含了20多种材料如干香蕉、干面包、多种坚果、辣椒等等,当然还有巧克力。在这提到的已经是最简单的一种了。
  INGREDIENTS: 1 turkey breast and wing 1份火鸡胸脯肉和翅膀
  1 and 1/2 teaspoons salt 1 1/2茶匙盐
  2 medium onions, chopped 2个洋葱,切好
  Bacon fat or oil 一些动物油或植物油
  2 cloves of garlic 2瓣蒜
  2 Tablespoons chili powder 2餐勺红番椒粉
  1 small dried hot red chili, seeded and chopped
  1个小干红番椒,去核,切好
  1 cup ground nuts (almonds, walnuts, peanuts or cashews)
  1杯碾碎的坚果(杏仁,核桃仁,花生仁和腰果)
  1 ounce bitter chocolate
  1盎司原味巧克力
  Cut the turkey into several pieces. Place in a large pot, add water to cover, and bring to a boil. Add the salt, and simmer for 30 minutes.
  把火鸡砍成几块,放到锅中,加入水并盖上盖子,把水烧开。加入盐,小火煮30分钟。
  While the turkey is simmering, brown the onion in bacon fat or oil. Add to the pot, along with garlic, chili powder, dried chili, nuts, and chocolate. Cover and simmer until turkey is tender and the sauce is well blended and thickened.
  在用小火煮火鸡的过程中,把洋葱放到油里炸一下,把炸过的洋葱连同蒜瓣、红番椒粉、干红番椒、坚果和巧克力一起放到锅内。盖上盖子继续用小火煮,直到火鸡肉变嫩,各种调料混合均匀散发出浓郁的香味为止。
  Correct seasoning to taste.
  吃的时候可以加入适量调味料。
  2、French Chocolate Truffles 法式巧克力软糖
  INGREDIENTS: 1 cup sweet (unsalted) butter 1杯甜黄油(不加盐)
  8 ounces semisweet chocolate, coarsely chopped
  8盎司半甜巧克力,稍微切一下
  1/2 cup brandy 1/2杯白兰地
  Unsweetened cocoa powder 不甜的可可粉
  In a heavy saucepan, cut the butter into pieces and melt over medium-low heat. Turn heat to medium, and when butter bubbles, stir to mix well. When bubbling turns to foam, remove the butter from the heat.
  在平底深锅内,把黄油切成小块,用中低温把它煮化。把火调至中温,当黄油冒泡时,搅拌均匀。当黄油起沫后,把它从火上移开。
  Let it settle for 5 minutes, then skim any remaining foam from the top. Carefully pour the clear liquid into a cup, leaving the light brown sediment in the pan. Wipe pan clean with a paper towel.
  把黄油搁置5分钟,撇去上面的泡沫,小心地把锅内的透明液体倒入杯中,留下褐色的沉淀物。用干净的纸巾把锅擦干净。
  Return the clarified butter to the clean saucepan. Add the chopped chocolate. Stir over very low heat until chocolate is melted and smoothly blended with the butter. Remove the pan from heat and cool slightly. Stir in the brandy.
  把透明的黄油倒回锅内,加入切好的巧克力,在小火上搅拌直到巧克力完全溶化,与黄油混合到一起。把锅从火上移开,微微晾凉。加入白兰地继续搅拌。
  Refrigerate for several hours or overnight, until the mixture is firm enough to handle (Stir it occasionally to prevent the butter from separating). Shape the chilled mixture into irregular balls, about 1 to 1 1/4 inches in diameter.
  把以上做好的巧克力液放入冰箱中几个小时或一整个晚上,直至液体全部凝固可以拿起来(放入冰箱后,记得偶尔搅拌一下,以防黄油与巧克力分开)。把冰冻后的巧克力块做成形状不规则的小球球,直径大约是1或1/4英寸。
  Sprinkle the cocoa on a sheet of wax paper, and roll the truffles in it to coat them. Place on a cookie tray and refrigerate until firm. Then store between sheets of wax paper in a tightly covered container in the refrigerator. (They’ll keep well for several weeks.) Serve chilled.
  把可可粉洒到蜡纸上,在巧克力糖外面沾上一层可可粉,然后把它们放到托盘里,再次冷冻。最后把所有的巧克力糖一层层垒到蜡纸上,密封放进冰箱里。(可以保存好几个星期)
  Makes 3 to 3 1/2 dozen truffles.

  INGREDIENTS: 2 and 1/4 cups all-purpose flour 2又1/4杯面粉
  1 teaspoon baking soda 一茶匙苏打粉
  1 teaspoon salt 一茶匙盐
  1 cup butter, softened 1杯液体黄油
  3/4 cups granulated sugar 3/4杯砂糖
  3/4 cup packed brown sugar 3/4杯袋装红糖
  1 teaspoon vanilla extract 一茶匙香精
  2 large eggs 2只鸡蛋
  2 cups (12-ounce package) chocolate chips 2杯(12盎司装)巧克力颗粒
  1 cup chopped nuts 1杯切好的坚果
  Preheat oven to 375° F. 把锅预热到375华氏度
  Combine flour, baking soda, and salt in a small bowl. In a larger bowl, beat the butter, granulated sugar, brown sugar, and vanilla extract until creamy. Add eggs one at a time, beating well after each addition. Gradually beat in the flour mixture. Stir in chocolate chips and nuts.
  把面粉、苏打和盐加入小碗内,混合搅拌。在大碗内把黄油、砂糖、红糖和香精混合搅拌成乳状,分开把鸡蛋加进去,每加入一个鸡蛋都要搅拌均匀。把小碗中的面粉加入大碗内,搅拌均匀。最后加入巧克力颗粒和坚果,继续搅拌。
  Drop by rounded tablespoon onto tinfoil. Bake for 9 to 11 minutes or until golden brown.

  Cool on baking sheets for 2 minutes. Then remove to plates and cool completely.
